The removal of salivary glands (i.e. those glands that produce spittle) becomes necessary when tumors (mostly benign) develop within the glands, resulting in swelling of the face and/or pain. These operations need careful planning and result in hospitalisation over a slightly longer period for  operations such as tympanoplasty of septoplasty.
